Tomato Bruschetta

Serves 4

8 slices of rustic bread
4 garlic cloves, halved
8 plumed tomatoes, peeled and diced
olive oil for drizzling
salt and pepper
basil leaves

  1. preheat the grill. lightly toast the bread on both sides. rub each piece of toast with half a garlic clove and then return to the grill for a few seconds.
  2. divide the diced tomatoes among the toast. season to taste with salt and pepper and drizzle with oil. serve immediately, garnished with basil leaves.
